French Toast with Mixed Berry Compote and Baked Brown Sugar Walnuts

INGREDIENTS
- 4 item eggs
- ¼ cup of cream
- 1 teaspoon of cinnamon
- ½ ounce of vanilla extract
- 1 ounce of powered sugar
- 4 item slices of thick sliced bread
- ¼ cup olive oil
- 2 tablespoon water
- 2 tablespoon granulated sugar
- ¼ cup Grand Marnier (optional)
- 1 cup fresh blueberries
- 1 cup fresh red raspberries
- 1 cup fresh strawberries quartered
- 1 cup walnuts
- ½ cup brown sugar
- ½ cup butter
PREPARATION
French Toast:
- Crack 4 large eggs and add cream into a mixing bowl and whisk.
- Add the cinnamon, vanilla, and ½ ounce powered sugar and continue to whisk until all ingredients are dissolved.
- Coat a skillet with olive oil and place of medium heat.
- Dip bread in the egg batter mixture making sure both sides are coated.
- Place bread on hot skillet and cook for 3 minutes on each side until bread is golden brown.
Compote:
- In a large saucepan combine water, granulated sugar. Heat over medium heat until sugar is dissolved and mixture reduces by 1/3.
- Whisk in Grand Manier and cook for 1 minute longer.
- Add all berries; gently mix together. Folding over not to crush berries completely. Set aside.
Walnuts:
- Preheat oven to 350 F. Over medium heat melt butter and add stir in brown sugar.
- Add walnuts and sauté for about 3 -4 minutes, ensuring that walnuts are well coated with sugar and butter.
- Remove from heat and spread walnuts on a non-stick baking sheet and place in oven for 2 -3 minutes.
Place French toast on a plate, cut in half, and serve with compote and walnuts.
Garnish plate with powered sugar and serve.
