INGREDIENTS
- 1 item cantaloupe
- 1 item honeydew melon
- 1 item fresh pineapple
- 2 item ripe, firm peaches
- 2 cup fresh berries, such as blueberries, strawberries, blackberries
- 1 item star fruit (carambola)
- 2 tablespoon lime juice
- 3 tablespoon honey
- 1 cup ginger ale (or white wine for adult party)
PREPARATION
Have watermelon at room temperature for easier carving. Cut thin slice from bottom so it will have a flat base and sit firmly. Cut off top third or half of the watermelon. If desired, draw chosen design on watermelon with sharp pencil or etch with knife tip. Using sharp knife with pointed tip, carefully and cautiously carve out design. With melon baller, cut balls from both parts of watermelon. Remove seeds from balls; place in large bowl. Remove remaining pulp from watermelon to make basket or bowl. Drain, if necessary. Cut balls from cantaloupe and honeydew melons; add to bowl with watermelon balls. Remove rind and core from pineapple, then cut it into bite-size chunks. Add pineapple to bowl; cover and chill. Just before serving, peel and slice peaches, prepare berries, and slice star fruit crosswise. Combine all fruit in large bowl. To make dressing: In small bowl, combine lime juice and honey. Stir in ginger ale until blended. Drizzle dressing over fruit; toss to mix and coat. Pour or spoon into watermelon shell. Garnish with fresh mint leaves, if desired.
