Sinful Triple Chocolate Cookies

INGREDIENTS

  • 3 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cinnamon
  • 1 1/8 cup white chocolate chunks
  • 1 1/8 cup bittersweet chocolate chunks
  • 3/8 cup unsweetened chocolate
  • 7 ounce light brown sugar
  • 3 ounce granulated sugar
  • 4 ounce (1 stick) melted and cooled unsalted butter
  • 1 item egg
  • 1 item yolk
  • 1 teaspoon vanilla extract
  • 1 cup confectioners' sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract

PREPARATION

Preheat oven to 300°F and set the rack on the middle shelf. Lightly whisk to combine the flour, cocoa powder, baking soda, salt and cinnamon in a bowl and set aside. Chop the three chocolates into ¼ inch to ½ inch pieces and combine in one bowl. Combine the two sugars in a large bowl and mix. Slowly drizzle and mix in the cooled butter followed by the egg, yolk and vanilla extract. Stir in the flour mix with a wooden spoon followed by the chocolates. Dough will look dark brown and chunky. Using a 1-ounce ice cream scooper, scoop the dough onto a cookie sheet with a nonstick surface. Bake for 14 to 16 minutes or until just barely firm on the edges. Remove from the oven and allow to cool for 5 to 10 minutes on a heat resistant surface. Use a spatula to release cookies from the cookie sheet. They're best enjoyed warm!

These cookies are so dark and deep with chocolate that a sweet sugar glaze helps even out the intensity. To make the glaze, stir to combine all glaze ingredients in a large bowl with a whisk or fork. Add more water or confectioners' sugar as needed to get a consistency that will easily drip off a fork. Drizzle as much as you like across the cookies.
