Black Beans and Yellow Rice

INGREDIENTS
- 4 ounce box 10-minute (boil-in-bag) yellow rice
- 1 tablespoon olive oil
- 1/2 cup chopped or sliced onion
- 1/2 cup chopped or sliced green bell pepper
- 1 teaspoon chopped or minced garlic
- 2 item 15-ounce cans black beans, drained, rinsed
- 1/4 cup vegetable broth or water
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt (optional)
- 1 tablespoon chopped cilantro
PREPARATION
Prepare rice according to package directions. In medium-size saucepan, heat oil over medium heat. Add onion and bell pepper; cook over high heat 2 minutes, stirring occasionally. Add garlic; reduce heat and cook 2 minutes. Stir in beans, broth, pepper, salt and cilantro. Heat through. Serve over yellow rice. Garnish with cilantro sprig. Delicious served with sliced tomatoes and cucumbers.
