Carrot Slaw

INGREDIENTS
- ½ cup mayonnaise
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon salt
- ¼ cup sugar
- ¾ pound shredded carrots
- ¾ pound shredded jicama
- 1 cup dried cherries
- ¼ cup canned pineapple chunks, drained
- 1 teaspoon crushed red pepper (optional)
- 2 tablespoon chopped chives
PREPARATION
In a medium-size bowl, add mayonnaise, pepper, salt and sugar. Mix together. Add carrots, jicama (also called the Mexican potato), dried cherries and pineapple chunks. Stir together. Add red pepper, if desired. Top with chives. Cover with plastic wrap, and refrigerate for at least 30 minutes before serving, allowing flavors to meld.
