Turkey Bacon and Veggie Frittata

Cooks Notes: Veggies are optional. Feel free to add any vegetables that you have left over in your fridge. Any other meat or seafood can be used as well.

COOK TIME

35 Minutes

INGREDIENTS

  • 8 item large egg whites or whole egg
  • 1 item package of reduce fat or fat free cream cheese and/or 8 oz of sour cream
  • 1/2 cup chopped leeks
  • 1/2 cup red bell peppers julienned
  • 1/2 cup orange bell peppers julienned
  • 1/2 cup chopped Turkey bacon
  • 1/2 cup sharp shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

PREPARATION

In a large bowl mix the eggs and sour cream and/or cream cheese together. (If you are using the cream cheese you can use a mixer to blend.)  Mix veggies, bacon and cheese. Add salt and pepper. Take a 10 inch ovenproof nonstick skillet and coat with cooking spray. Pour mixture into the pan and bake at 400 degrees for about 30-40 minutes and if it is still a little jiggle in the middle turn on the broiler for 3-4 minutes. Serve immediately. Eat and enjoy!
